A Quick and Delicious Seafood Breakfast Recipe

This one pan method of cooking eggs and seafood is a European favorite. Quick prep and quick clean up make this recipe ideal for on-the-go folks who want to make the most out of their morning!


  • 5 eggs
  • 5oz wild-caught Pacific Cod
  • 1 small onion, chopped
  • 3 TBSP Olive Oil
  • 1 TBSP flour or corn meal
  • 1 TBSP Garlic, chopped
  • 1 TBSP butter
  • 1 tsp dry mustard
  • 1 tsp fresh parsley
  • 2 oz white wine
  • 1 tsp lemon juice


  • Caramelize onion and garlic in olive oil over medium heat until just browned
    • Deglaze pan with white wine
    • Bread cod lightly in flour or corn meal
    • Add butter to pan, melt
    • Gently place coated cod in buttered and onion pan
    • Whip eggs, lemon juice and dry ingredients- and additional herbs and spices as desired
    • Slowly pour egg mixture around cod portion
    • Cook gently ensuring the egg doesn't overcook or get stuck to the pan
    • Continue cooking until done: about 5-6min
