Wild Caught Alaska Black Cod (Sablefish) Portion

Wild Caught Black Cod is also known as sablefish or butterfish.  Black cod is a delicate fish with a rich flavor. Black cod is also packed with healthy omega 3 fatty acids. It's said to have a melt-in-your-mouth experience and texture.  The high concentrations of heart healthy oils make them very forgiving to cook.  Sauteed, roasted, or smoked once you've tried this buttery whitefish you'll be hooked.

Each 5-7 oz. portion serves one person.

About our black cod.

Our 6 oz Wild Alaskan Black Cod portions are the perfect size for individual meal serving. The skin on, bone in portions have a buttery, sweet flavor with a delicate flaky texture. The high concertation of healthy fatty acids give this fish it's district buttery texture.

What makes our black cod special?

Our Black Cod comes from our trusted partners Seth and Chris at Yakobi fisheries in Southeast Alaska. This fish can live up to 90 years, spending its life in the frigid waters of the North Pacific at depts of up to 5000 feet. Long line fishing gear is used on the fishing boats in the sustainably managed fisheries. Interestingly Black Cod is not part of the cod family, leading to the Sablefish name becoming more widely recognized.

What about the health benefits?

Years spend in the deep cold waters gives Black Cod more omega-3 fatty acids than most salmon species. This delicious whitefish is the perfect option if you're looking to add some heart and brain healthy variety to your weekly menu. The omega-3's are primarily DHA and EPA, the most studied, beneficial and readily usable by the body.

Why we love it!

"The high nutritional value and melt in your mouth flavor of Black Cod makes it a favorite at the Kurian household" says Jenn Kurian, co-owner of Wild for Salmon. The whole family enjoys the rich, yet mild flavor… AND the kids love to eat the skin!

Black Cod portion recipe

Seafood continues to cook after it’s removed from the heat, so take it off just as soon as it starts to flake. We often tell our customers that if they think their fish is almost done cooking-- it’s done! Slide a sharp knife tip into the center of the thickest part of a cooking salmon portion, checking for color and an internal temperature of at least 145°F. Black cod is delicate, for best results you should pan fry, sear or bake it. Black cod should only take a few minutes to cook.

Baking

  1. Rinse and pat fillets dry.
  2. Spread a thin coat of cooking oil over salmon portion.
  3. Coat bottom of an oven-safe pan with cooking oil.
  4. Sprinkle seasonings over fish.
  5. Bake in 375°F oven for 10-12 minutes per inch of thickness.

What does “Sustainably Harvested” mean?

For sockeye salmon, the Alaska State Department of Fish and Game monitors all commercial, sport, and residential salmon fishing. This means a set number of permits are sold each season based on predictions of the number of salmon expected to return to spawn. As the salmon move towards the bay, researchers actively monitor their movement and count the number of salmon in each school. They then use this data to determine when the fishermen are allowed to fish, if the volume of salmon is too low they are not allowed to fish. Once the volume rises to a number which allows for enough fish to escape upstream to spawn, the fishermen are given a set amount of time that they are allowed to fish. This timed fishing allowance and escapement number is vital to the sustainability of salmon.

+

How should I store my seafood?

We guarantee the quality of our products to be maintained for one year from purchase when kept in proper conditions. All seafood should be kept in a freezer that maintains even temperature, do not store any seafood on the door or towards the front of the freezer, and do not stack other items on top of seafood. If your seafood loses its vacuum seal, plan to use those pieces first! They are still completely safe to eat but are more prone to freezer burn. Freezer burn is the process of water being pulled from the fish and turned into ice crystals.

+

Where is my order being sent from?

All Wild for Salmon orders are shipped from Bloomsburg Pennsylvania. The owner and Fisherman, Steve Kurian, is a PA native. Each summer he travels to AK to fish for sockeye salmon which is flash-frozen, vacuum sealed, and transported through cold storage to our store in Bloomsburg, PA where Steve and his family reside.

+

What does “Wild-Caught” mean?

Our fish are harvested in their natural environment. They spend their life in the open waters and eat their natural diet. You can read more about why "Wild-Caught" is healthier for both you and the fish in our blog.

+

How are the salmon caught?

Our sockeye salmon are caught using a stationary gillnet, meaning we set our nets with small buoys to float at the top of the water and then the anchor holds one end of the bottom of the net taut, so the net is against the open current. The salmon then swim into the net and are caught by the gills, once caught the nets are pulled on board. As each salmon comes on board it is removed from the net by our deckhands placed on a rubber slide so they do not hit the floor of the boat and become bruised. This slide then moves them to another deckhand who bleeds each individual salmon and then places it into a refrigerated circulating seawater storage tank below. All salmon are then processed within 12 hours of being caught by our trusted processor Leader Creek Fisheries. Processing includes flash freezing and vacuum sealing.
