Sockeye portion recipe
Seafood continues to cook after it’s removed from the heat, so take it off just as soon as it starts to flake. We often tell our customers that if they think their fish is almost done cooking-- it’s done! Slide a sharp knife tip into the center of the thickest part of a cooking salmon portion, checking for color and an internal temperature of at least 145°F.
Grilling
Most fish cooks best over a medium-high flame. Ensure the grill is hot before you start cooking. Liberally brush oil onto the grill or cooking surface just prior to cooking. Planking is a great way to add subtle flavor to your wild Alaska Seafood while also offering an impressive serving platter. Find out more on how to cook with planks here.
- Oil lightly and season fish to the desired amount.
- Grill skin-on salmon cuts skin side down for best results.
- Cook portion approximately 10 minutes per inch of thickness.
Baking
- Rinse and pat fillets dry.
- Spread a thin coat of cooking oil over salmon portion.
- Coat bottom of an oven-safe pan with cooking oil.
- Sprinkle seasonings over fish.
- Bake in 375°F oven for 10-12 minutes per inch of thickness.
Broiling
- Preheat the broiler to Med/High.
- Rinse and pat fillets dry.
- Place parchment paper inside a shallow, nonmetal dish and seafood portion on top of the parchment, skin side down.
- Top with cooking oil and seasonings of choice.
- Broil the fish 4 to 6" from the heating element for 5 to 6 min or until fish reaches an internal temp of 145F (no need to turn or flip).

All frozen products are carefully packed on dry ice to keep items frozen however some packages may not arrive solidly frozen. If you items do arrive partially thawed but frozen in the center, they may be safely refrozen with no noticeable loss of quality or nutritional value. All frozen packages will arrive within 1-3 business days depending on your destination. You will have access to your shipping information so you can track your package along the way!

How will I receive my product?
Items are shipped in an insulated box with dry ice to keep items frozen until they reach your home. All orders are shipped via FedEx unless another carrier is requested by the customer. You will be emailed the tracking information as soon as the order ships. Please allow until 8PM for updated information from FedEx.
How is the fish packaged?
All products are Individually vacuum-sealed in BPA-free plastic.
What does “Sustainably Harvested” mean?
For sockeye salmon, the Alaska State Department of Fish and Game monitors all commercial, sport, and residential salmon fishing. This means a set number of permits are sold each season based on predictions of the number of salmon expected to return to spawn. As the salmon move towards the bay, researchers actively monitor their movement and count the number of salmon in each school. They then use this data to determine when the fishermen are allowed to fish, if the volume of salmon is too low they are not allowed to fish. Once the volume rises to a number which allows for enough fish to escape upstream to spawn, the fishermen are given a set amount of time that they are allowed to fish. This timed fishing allowance and escapement number is vital to the sustainability of salmon.
How should I store my seafood?
We guarantee the quality of our products to be maintained for one year from purchase when kept in proper conditions. All seafood should be kept in a freezer that maintains even temperature, do not store any seafood on the door or towards the front of the freezer, and do not stack other items on top of seafood. If your seafood loses its vacuum seal, plan to use those pieces first! They are still completely safe to eat but are more prone to freezer burn. Freezer burn is the process of water being pulled from the fish and turned into ice crystals.
