Sockeye Salmon Croquettes (Gluten Free)

Substitute gluten free breadcrumbs in your traditional Salmon Croquette recipe, add some diced veggies and you have delicious and adaptable Canned Salmon Croquettes! Canned Salmon is pre cooked, so meal prep is a snap! 

Ingredients:
  • 2 Cans Sockeye Salmon, clean bones and skin 
  • ½ red pepper, diced
  • ½ yellow pepper, diced
  • ½ yellow onion, diced
  • 1T fresh chives, chopped
  • 1/2 C gluten free bread crumbs (reserve half) 
  • 1 Egg
  • 1T Sour Cream 
  • 1 tsp Pepper
  • 1/2 tsp Salt
Instructions:
  1. Combine all ingredients in mixing bowl
  2. Form mixture into 3 oz patties. 
  3. Place reserved bread crumbs on plate and coat each croquette. 
  4. In a medium sized pan, heat 1T oil over med high and saute croquettes until golden brown on each side- About 2-3 min per side.
  5. If croquette is not hot in center finish in oven at 365°F for 7-9 minutes.
  6. Garnish with dollop of sour cream, enjoy!
