Ingredients

  • 2 Wild Alaskan Rockfish Fillets
  • 1 cup bread crumbs 
  • 2 Tbsp Parmesan cheese
  • 1 cup Flour 
  • 3 eggs
  • 2 Tbsp cold water 
  • Salt and pepper to taste
  • Olive oil spray 
  • ¼ cup ketchup 
  • ½ tsp curry powder

Instructions

  1. Equipment: Air fryer, spatula, knife and cutting board, 3 mixing bowls, plate, whisk.
  2. Cut rockfish into thin strips and salt and pepper.
  3. In 3 different bowls setup for dredging fish. Bowl 1: Flour. Bowl 2: Egg and water combined in bowl and whisked together. Bowl 3: bread crumbs and parmesan cheese
  4. Keep one hand dry and other for egg wash, go through the motions of adding the fish to the flour, then the egg wash and breadcrumb mix putting the on the plate when finished.
  5. Spray the breaded rockfish on both sides and place in air fryer for 11 minutes at 400.
  6. Remove the fish onto a serving plate and spoon a small amount of the curry ketchup on the end of the rockfish. 
  7. Serve at your next Halloween gathering and enjoy!
