Goat Cheese & Sun Dried Tomato Croquettes

Ingredients:

  • 1 lb Ground Wild Salmon
  • 4 oz crumbled goat cheese
  • 4 oz Panko or bread crumbs
  • 1.5 oz sun dried tomatoes
  • 1 oz Fresh Basil, chopped
  • 1 egg
  • salt and pepper to taste

Instructions:

  1. Pre heat frying oil to 375 degrees
  2. Mix salmon, egg, cheese, basil, and sun dried tomato in large mixing bowl
  3. Form into 1" balls and dredge in seasoned bread crumbs
  4. Drop coated balls into frying oil and cook for 2 min or until they begin to float
