Often referred to as Americas Super Fruit, Cherries are now in season and can be found at your local farmers market. To commemorate their seasonal debut, we've decided to share a salmon recipe that is truly the "Cherry on Top" of all things flavor and fresh. This Tart Cherry Ginger Teriyaki Salmon dish unites tart with a little spice in just under 30 minutes.

Ingredients

  • 1 pound wild caught filet
  • 1/4 cup teriyaki sauce
  • 1/4 cup pickled ginger
  • 1/4 cup spicy cherry relish or jam
  • 1/4 cup dried tart cherries 
  • Sea Salt

Instructions

  1. Combine teriyaki sauce, pickled ginger, relish (or jam), and dried tart cherries in a small food processor. Puree until mixed (there will be chunks).
  2. Lay the salmon pieces on a parchment-lined baking sheet. Lighty salt with Sea salt
  3. Pour the sauce over salmon fillets, spreading evenly.
  4. Preheat oven to 450 degrees. Bake salmon for 12-15 minutes.
  5. Serve!
