Smoked Salmon Egg Salad

Combine two protein packed super foods into one delicious sandwich- eggs and salmon!  This is a great way to use up left over Easter eggs too! Croissants make this meal feel more grown up or make some tea sandwiches for a light lunch. 

3/4 cup mayonnaise
1 teaspoon dill weed
1/2 teaspoon lemon juice
1/4 teaspoon salt
1/8 teaspoon pepper
6 hard-boiled large eggs, chopped
4 ounces Wild for Salmon smoked Nova salmon, chopped
6 croissants, split
1-1/2 cups fresh baby spinach
