Red Wine and Cranberry Glazed Salmon

Thanks to Frea's Farm Winery for providing their dry red wine, "Blood, Sweat, & Cheers" to make this delicious glazed salmon. 

• 14 oz bag fresh cranberries
• 1 Cup dry red wine
• ½ C sugar
• 2 1x4 in strips orange peel
• 1 3-inch cinnamon stick
• Sockeye salmon, portioned 1 lb
• Salt TT
• Pepper TT

Combine cranberries, red wine , sugar, orange peel, cinnamon stick and salt in a medium saucepan; bring to a boil. Reduce heat to maintain a simmer and cook, stirring often, until most of the cranberries have burst, 10 to 12 minutes. Remove the orange peel and cinnamon stick. Cool.
Arrange salmon on a foil covered sheet tray. Season with salt and Pepper. Set oven to broil and cook salmon for 6- 8 mins under broiler. At end of cooking add the cranberry sauce on top of the salmon and finish cooking under broiler for another 1-2 minutes.
