RED WINE AND CRANBERRY GLAZED SALMON

Thanks to Frea's Farm Winery for providing their dry red wine, "Blood, Sweat, & Cheers" to make this delicious glazed salmon.

  • 14 oz bag fresh cranberries
  • 1 Cup dry red wine
  • ½ C sugar
  • Two, 1x4 in strips orange peel
  • One, 3-inch cinnamon stick
  • Sockeye salmon, portioned 1 lb
  • Salt TT
  • Pepper TT

Instructions

  1. Combine cranberries, red wine , sugar, orange peel, cinnamon stick and salt in a medium saucepan; bring to a boil
  2. Reduce heat to maintain a simmer and cook, stirring often, until most of the cranberries have burst, 10 to 12 minutes
  3. Remove the orange peel and cinnamon stick. Cool
  4. Arrange salmon on a foil covered sheet tray
  5. Season with salt and pepper
  6. Set oven to broil and cook salmon for 6-8 mins under broiler
  7. At end of cooking add the cranberry sauce on top of the salmon and finish cooking under broiler for another 1-2 minutes
